Gnocchi with chicken in a mushroom tomato sauce

A healthy, balanced recipe which is quick and easy to make. So, let’s get going!

Ingredients (4 portions):

  • 3 garlic cloves
  • tin of tomato puree
  • tin of chopped tomatos (I took one with spices already added, such as garlic and basil; a standard tin does the job though just as well)
  • 1 big onion
  • 4 chicken breasts
  • 250g mushrooms (any mushroom type will do – I used chestnut mushrooms)
  • 2 tbsp coconut oil
  • 1 tsp himalayan salt (any salt will do)
  • 1/2 tsp sugar
  • 800g gnocchi (i got mine from Lidl, and they taste really good)

This is how you do it:

  • Heat up the coconut oil in a frying pan over low to medium heat.
  • Add the finely chopped onion and finely chopped garlic. Let it fry for about 2 minutes.
  • Add the chicken (diced into small cubes) and let it fry until the chicken is white and almost cooked through.

  • Add the sliced mushrooms and put the lid on so muchrooms and chicken can cook through.

  • Once the chicken is cooked through lift the lid and and fry until all the water that comes out of the mushrooms evaporates.

    The chicken should be showing a brown-golden colour at this stage once all the water is gone.

 

  • In a seperate dsauce pan, add the tomato puree and diced tomatoes and bring it to the boil.

  • Add salt, sugar and as much pepper as you like (I always use a lot!) and let the mixure simmer for about 5 minutes.

  • In the meantime, bring a saucepan of water to the boil and add the gnocchi. Follow the instructions on the package of the gnocchi for further cooking guidance. You can of course make the gnocchi yourself – in order to keep this recipe quick and easy I chose to get some from a store.

  • Put the food onto a pre-heated plate (I always use the microwave) and decorate with fresh basil.
