Healthy Raw No-Bake Chocolate Brownies (Vegan)

If you are looking for a healthy treat that tastes better than a regular brownie, I got you all sorted out. This vegan, raw, no-bake chocolate brownie recipe is incredibly delicious and so much better for you than conventional sweets.

I used a recipe Vedika from Hot Chocolate Hits as a base, I will leave you the link to her blog below – check her out, her recipes are unreal!

This is what you’ll need:

  • 125g of nuts – you can use whatever you like; I used 90g walnuts and 35g cashews
  • 30 g (raw) cacao powder
  • 1 tbsp sprouted flaxseeds (optional)
  • 1 tsp salt
  • 225g soft dates (if they are not soft – soak them in hot water for about an hour and then drain them)
  • 2-4 tbsp almonds, roughly chopped

And this is what you’ll need for the chocolate frosting:

  • 2 tbsp (raw) cacao powder
  • 2 tbsp melted coconut oil
  • 1 tbsp maple syrup (or honey, if you don’t mind it not being vegan)

This is how you do it:

Add the nuts, cocoa powder, sprouted flax seeds and salt to a food processor and blitz it until the mix looks like a powder. You need quite a strong food processor for this.

Add the dates and continue to blitz the mixture. Depending on if the mix is too sticky or too dry, add some more dates or nuts to accomplish the desired consistency.

Take a baking tray and lay it out with baking paper. Press the dough into the shape of a rectangle onto the paper. I would recommend a thickness of about 0.5-1cm. Press some whole almonds into the dough and place your big brownie into the fridge.

For the glaze, combine the oil, cocoa powder and sweetener of your choice and put it into the fridge for a couple of minutes until the mix firms up. Once this is accomplished – after around half an hour – spread the ganache over the brownies and quickly add some chopped nuts to the top. You need to be fast for this step because the frosting hardens quickly.

Store these brownies in the fridge for up to 2 weeks in an airtight container.
