Delicious Healthy Energyballs (Vegan)

We all know it those moments when we come home from work or from the gym, desperate for something to eat. In those moments, we usually grab something that gives us quick energy, and is unhealthy most of the time.

I came up with a recipe for little energy bites that taste amazing and are full of goodness. They can be made in no time and are absolutely delicious. Nuts and chocolate, what can go wrong?

This is what you will need (8 balls):

  • 60g peanut butter
  • 20g unsalted peanuts, roughly chopped
  • 50g ground almonds
  • 1 tsp almonds, roughly chopped
  • 1 tbsp sprouted flaxseeds
  • 30g plain chocolate (here you can decide if you would like to use vegan chocolate with a high cocoa content or chocolate around 60%), finely chopped
  • 1 tsp sunflower seeds, roughly chopped
  • 1 tsp cocoa powder
  • sea salt

And this is how you do it:

Mix the ground almonds with the peanut butter, peanuts, flaxseeds, sunflower seeds, almonds, chocolate and small pinch of salt in a bowl.

Add the almond flour (except for 2 tablespoons) until a clay-like mass is formed.

Mix the remaining ground almonds and the cocoa powder together, form the nut-mix to a ball and roll in the chocolate-almond powder until the balls are fully covered.

Put the balls in the fridge for about 30 minutes before enjoying them – it helps them to become more firm.
