Supernutty Homemade Granola

One of the nicest (if not the best) granolas you will ever try – pinky promise!

This recipe is totally customizable so if you would like to add more dried fruit, nuts or other ingredients, feel free to let your creativity roam 🙂 This will give you the healthy kick to start your day.

Ingredients:

  • 500g oats – rolled oats or regular, take whatever you prefer or have available or prefer
  • 5 heaped tbsp of coconut oil – if you live in a hot place (or like to switch the heating on) and the coconut oil is liquid, take 7 tbsp
  • 250ml honey (runny honey preferred) or maple syrup for a vegan alternative (play around with the ratio for this – depending on flavour preference)
  • 100g seeds – I chose a seed mix I got at Lidl, which is a combination of sunflower and pumpkin seeds, but choose whatever you like
  • 50g sprouted flax seeds (optional)
  • 200g walnuts – or any nuts you like, almonds or pecans also go very well with this recipe
  • coconut shavings (optional)

This is how you do it:

Preheat the oven to 180 degrees/350F/GM4.

Melt honey and coconut oil in a dish in the microwave until they are combined.

img_5748Add all dry ingredients into a bowl.

img_5744Pour the oil-honey mix on top and combine well. Use a big dish for this (I chose a bowl which was way too small, so take a big sauce pan to start with, otherwise it will get messy!)

Spread the mixture out evenly on banking  paper spread out on a baking tray.

img_5755Bake for 10-15 minutes until brown and golden. Make sure that after around 6 minutes you stir the mix through so it bakes evenly

  • Enjoy with milk or yogurt and some fresh fruit.
