Healthy Reduced Sugar Apple & Cinnamon Granola (Vegan)

After posting a recipe for my super-nutty honey-roasted granola (https://makeitbakeittakeit.wordpress.com/2017/03/05/healthy-homemade-granola/) I came up with a reduced sugar vegan version (also super-nutty). If you are more of a sweet tooth feel free to increase the amount of maple syrup. If you want to keep things lean stick with the ratios below. without further a do, let’s get right into it!

This is what you’ll need:

  • 500g oats (porridge or jumbo, up to you)
  • 50g coconut oil
  • 50g maple syrup
  • juice of 1 orange
  • 100 walnuts, roughly chopped
  • 70g almonds, roughly chopped
  • 30g cashews, unsalted and roughly chopped
  • 2 tbsp sprouted flaxseeds
  • 50g seed mix (sunflower seeds, pumpkin seeds, whatever you like is gonna work fine)
  • 2.5 tsp ground cinnamon
  • 150 g dried apple – store bought or homemade (just chop off the apples into pieces and dry them in the oven for 1.5-2 hours at 110 degrees)

This is how you make the granola:

Preheat the oven to 160°C.

Melt the coconut oil (microwave or stove) and mix in the maple syrup and the orange juice.

Mix all dry ingredients except for the dried apples together.

Pour the maple syrup, orange juice and oil over the mixture and stir through thoroughly until all ingredients are coated and wet.

Put the mix onto a baking tray and roast for about 30-35 minutes.

Turn around the tray halfway through and stir the mix every ten minutes to make sure all of the granola gets a crunchy finish. When the granola is golden brown all the way through remove it from the oven and pop the apple slices on top.

Store it in an airtight container to enjoy it for longer.
